Walnut Brownies
A chocolatey treat that won’t leave you feeling guilty.

Pre-heat the oven to 190°C, fan 175°C, gas mark 5. Line a brownie tin, measuring 21x31cm, with baking parchment on the base and sides. Leave some paper overlapping so you can remove them easily from the tin.
In a medium pan, slowly melt the Clover and plain chocolate, stirring to combine. Remove from the heat. In a jug, mix the eggs, sugar and vanilla extract lightly with a wooden spoon. Add this to the chocolate mixture and mix gently. Then add the flour, walnuts and salt and fold very gently in. Don’t over mix, beat or whisk at any stage, this will preserve the lovely density of the brownie.
Bake the brownie in the middle of the pre-heated oven for 20 minutes and remove. Leave to cool completely in the tin. Cut into 12 squares. Great with a cup of tea/coffee, warmed with ice cream or even as a pudding with raspberries.
